Yield: Pancakes (2 Servings)
Needed Kitchenware: 2 Mixing bowls, non-stick pan
  • 1 cup plant-based milk
  • 1 tbsp lemon juice or apple cider vinegar
  • 2 tbsp maple syrup
  • 1 cup flour
  • ½ tbsp baking powder
  • 1 tbsp matcha powder
  • ½ tsp salt
  • (Optional) Cooking Spray or oil

Directions

  • Mix together the plant-based milk, lemon juice or apple cider vinegar, and maple syrup. Set aside for 5 minutes.
  • Mix together the flour, baking powder, matcha powder, and salt. Now add the wet ingredients and mix until combined. Let this rest for 5 minutes. Pre-heat your pan on medium heat over the stove in the last minute of rest.
  • (Optional) You may use cooking spray or oil in the pan and spread evenly to cook the pancakes with. Omit this if doing oil-free. Pour ½ cup of batter onto the pan. For fluffy pancakes, do not spread the batter out. For thinner pancakes, spread the batter out quickly with your spatula or spoon before it starts to cook. Allow to cook 2-3 minutes and flip cooking for another 1 minute on the other side.
  • Repeat until all the pancakes are done. Top with your favorite toppings and serve immediately, enjoy!
Notes

To make whole food, use whole wheat flour and omit the oil in the pan.

You can make a large batch of pancakes and freeze after they are cooked and cooled down.

To keep all the pancakes warm until the batch is done, set the oven to warm and place the cooked pancakes all together in the oven to keep warm.

These pancakes are everything you'd expect with your usual pancakes BUT with the matcha powder mixed in, you get a wonderfully light, earthy flavor. Then after your breakfast is done, you have a good buzz going for several hours! 😁

What is Matcha?

Matcha is finely powdered green tea leaves. Tea farmers in Japan created this type of tea more than 1,000 years ago. Unlike other green teas, matcha uses the whole leaf, which increases the amount of caffeine and antioxidants.

Usually known for its health benefits because of the high antioxidant content, matcha is becoming more well-known in the world, especially for use in recipes. Aside from the antioxidant content, matcha is high in chlorophyll, vitamins, and minerals.

What Does Matcha Taste Like?

Matcha tastes a little earthy. For those that know what mugwort tastes like, it's similar, but much more subtle. If you've never tried it before, but are a fan of coffee or chocolate, chances are you'll appreciate this breakfast simply due to the added caffeine boost that matcha provides as a green tea.

Since you might be trying this for the first time, don't fret, because as a breakfast pancake, you can cover these with as much fruit and maple syrup as you'd like. The matcha flavor is so subtle that you might not even taste it after being smothered in so much fresh fruit and syrup!
